Healthy Soup Recipes for Weight Loss: Roasted Tomato Soup

 There is nothing like a good portion of healthy soup on these cold winter days when all you want to do is curl up on the couch and relax. Did you know that when it comes to your weight loss goals, including healthy soup recipes can help? In this paper, we present one of my favorite healthy soup recipes for weight loss that is easy to do and will help you take a step closer to achieving your goal. This healthy soup recipe for losing weight is well balanced and can be served with a bit of quinoa for a hearty meal rich can enjoy any time of the day.
1. Roasted Tomato and Quinoa Soup
For 4 people
Ingredients
• 2.5 kg of plum tomatoes (or vine ripe tomatoes)
• 2 tablespoons of coconut oil
• 1 red onion, peeled and diced
• 1 teaspoon dried basil
• 1/2 teaspoon red pepper flakes if you like heat, or omit
• 1 can diced tomatoes
• 4 free yeast reserve cubes formed by
• 1 bay leaf
• Sea salt and freshly ground pepper, to taste
Method
1. What you should do first: roast tomatoes.
2. Preheat oven to 400 degrees F.
Three. Cut the tomatoes in half and throw them in a baking dish with coconut oil, dried Italian herbs and a few cloves of peeled garlic. Add a generous squeeze of lemon.
April. Place in the oven and prepare the following ingredients. Tomatoes should be ready in about 45 minutes.
May Heat the coconut oil over medium heat. Add onion and garlic and stir for five minutes.  Add herbs and pepper flakes, and stir for a minute or two, until the onion is tender. Add canned tomatoes and stock. Stir in the bay leaf and season with salt and pepper to taste.

June Add the oven roasted tomatoes and garlic, breaking pieces with a wooden spoon.
July. Cover and bring to a boil, reduce heat and continue cooking over low heat for about 30-40 minutes.
August Discard the bay leaf.
9. Puree in a blender, then return to pot. Adjust seasoning adjustments. Warm.
10. If the soup is too thick, add enough hot broth to dilute the consistency you prefer.
